Gluten-free, sugar-free, high fiber delicious mug muffin recipe!

Delicious gluten-free, sugar-free, high fiber mug muffin recipe

If you’ve been doing Keto or Paleo for awhile (or any of the grain free, gluten-free, and sugar-free diets), I really think you’re going to love this EASY and delicious muffin recipe! I know I’m madly in love with it.

Missing bread, cake, or dessert?

I really believe I have found my answer to cake and bread! I’d been missing it after not eating cake or bread in a year. Now, by adding this muffin to my one meal a day, I feel full, I’ve increased my daily fiber intake, and I’m experiencing better (easier) BMs–a real win-win in my humble opinion!

The ingredients

Note: T = Tablespoon and t = teaspoon.

Dry ingredients

1 T coconut flour or Amaranth flour
1 T nut flour
1 T oat bran
2 t Ceylon cinnamon (helps to regulate blood sugar)
1/2 t baking powder

Wet ingredients

1/2 T wet chia seed, or soaked & ground flaxseed, or 1 T pulp from making nut milk, or pumpkin, peanut butter, chopped pear, or apple butter
1 raw egg (jumbo size works best to turnout a fluffier muffin)
1/2 t vanilla
Splash of water (especially if you’re using a regular sized egg)
Topping after the muffin is cooked
1 T butter, or hard coconut oil, or yogurt (helps you get more healthy fat into your diet)

How to mix it

You can mix the dry ingredients in a bowl first and set aside. Or you can add them two at a time and stir in the same mug used to whisk the wet ingredients.
In your mug, whisk the raw egg in the mug and add other wet ingredients. Slowly incorporate the dry ingredients to the mug and mix well. A thick batter consistency is what you want to see. (If the mix is too dry or sticky, the muffin will be dry.) This is the art involved in making an aWEsOMe muffin–and totally worth playing around with!
Place mug (uncovered) in the microwave and cook on high for 2 minutes. (The time may vary depending on the strength of your microwave. My daughter has a new Whirlpool microwave and 1 minute 35 seconds is perfect!)
The muffin will rise above the mug. This is fine. Let it cook. When the oven stops cooking, the muffin will decompress in the mug.
Use a spoon or butter knife to remove the muffin from the mug. Slice the muffin in half lengthwise to add topping and enjoy. (My husband and I share one of these after our dinner and it’s such a treat!)
All ingredients organic, free range, etc.

What I use

Yes, I bought my coconut flour from the cold case at Ionie’s Cafe in Sarasota, Florida. (It keeps for a long time in the fridge too!). And if you’d like, check out this post I wrote about Ionie’s here.
The other brand of coconut flour we tried was Bob’s Red Mill, and it does add a coconut flavor to the muffin if you don’t use another flour to offset it.
And the brand of eggs I’ve been buying–yes, it probably has something to do with the name 😉

How it looks – while making it and after

This is the whisked egg, vanilla, and 1/2 t of water in the mug:

And this is the apple butter version:

And this is the pumpkin version:

Serving with cream cheese:

Experiment with it

I’ve been experimenting with this muffin recipe and adding peanut butter, pumpkin, or raw cacao in place of the Ceylon cinnamon. I’ve tried apple pie spice instead of the cinnamon, but the point for me was to really use this muffin as a way to reduce my overall blood sugar.  If that’s your goal too, you could use 1 T of the Ceylon cinnamon and 1 T of the apple pie spice–and see if you can taste the difference. (I can’t).

Initially, the muffins I had been making were very fluffy. Even the ones I created BEFORE using the Baking Powder. I think I was using 2 T of flour at the beginning though, 1 was coconut flour and the other was Amaranth flour. Also, I had used a jumbo sized egg.

I’ve used a tablespoon of chopped fresh pear (or apple butter) as an addition and it made an even fluffier (and larger) moist muffin. (I tried a green apple, but preferred the pear or apple butter instead–if you go with the pear it adds more fiber too!) I doubt there’s any limit of what you can do with this.

Some of the health benefits

I had been looking for a way to incorporate oat bran into my diet (since going grain-free over a year ago), because I realized I needed the health benefits of fiber. Namely, fiber is necessary to do a good detox (detoxify the body), and ease a bowel movements (BM). Simply adding this muffin once a day made my BMs more productive. I am still surprised at the difference it made–and how quick the change occurred!

Whatever works – Fascia Blasting

Ashley Black’s Fascia Blasting Products

First, I have been fascia blasting for a little over two weeks as of this writing. (Stay tuned for updates.)

For those who have read my blogs for any length of time, or my books, (in particular, Take It Upon Yourself to Live a Wholly Vibrant Life!) you know that I say do whatever works for you (no matter what others tell you. And I apply that philosophy not only to food, but exercise, spirituality, relationships, and so on. If it works for you, why let the judgments of others cause you a moment of angst?

Why the negativity?

I’ve had two female friends tell me they “heard” negative stuff about fascia blasting when I mentioned I was doing it. I didn’t answer either of them. I love blasting and have seen and felt results in only two weeks!!! (Pics to come later).

I don’t even know why I mentioned it to either gal though, because this was just something I was drawn to do during a very emotional time–not as something to blog about.

I am in a private Facebook group (FasciaBlasters for Women) about fascia blasting and I realize people can misuse these devices, as well, some people with certain limitations and issues shouldn’t use them. But one needs to read Ashley’s book and use good sense. I am learning so much in the group about how to use these products. It’s very encouraging!

Emotional ease & focus

Mostly, blasting has helped me focus on my body and ease me through the grief process of losing my dad a few weeks ago.

You see, my dad passed away unexpectedly and as though that wasn’t bad enough, I am his sole heir and administrator of his estate.

After only recently completing my book, I knew from writing it that I didn’t want to fall into depression. And one way to stay upbeat while going through a life change is to exercise. But, that’s a weak area for me.

So, I ordered something new (Ashley’s fascia blaster kit) to help myself, and potentially help ease my husband’s back pain (from overuse at work).

Thanks to Ashley

I didn’t notice much the first few days on my skin (except some bruising as the book says can occur) after blasting, but I did feel more energized and positive, and my husband said his back tension eased after I worked on his back the first day! So, I kept on using it.

Within two weeks, my skin on my arms, legs, and abdomen was noticeably smoother and less cellulite “bumpy” looking. I didn’t take “before” pictures, because I really didn’t expect to write about this, since it is sooo personal.

You can learn more about fascia blasting here.

I am so thankful for Ashley Black, her informative book, and fascia blasting products! #HatersGonnaHate #LetThem #Winning ❤️🦋🌀😉

About “Being Supportive”

p.s. The two friends are both in health fields. One is an aesthetician and the other is a personal trainer who sells Yamuna products and training. I have supported both in the past and was disheartened that they had to talk negatively to me about blasting. 🤯🤭

After you get what you want

After you get what you want

What happens after you get everything in life that you think you want?

What happens then, and what IS this life about?

Desiring

Every moment we desire something. We desire warmth, safety, deeper connections. Oh, you thought I was going to say we want to be happy! Ha! But what if the “pursuit of happiness” was simply the equivalent of a mouse on a wheel? What if we just want to fulfill each of our desires, when we desire them? Nah! That would be too easy, and we’d all be fat and lazy. Where’s the fun in that? (I think most of us want to do it our way.)

So, in this blog I’ve talked a lot about how we can live a vibrant life. Get healthy, connect, and let go of stuff (unless it’s something IMHO we can use to increase our level of health and wellness). I guess you can see the irony in that and what I am about to state next.

I have been following Chris Cade for many years. Oh, I never bought his book or bought anything from him, but I read his emails every day, for YEARS!

Learning

I’ve sat with gurus, coaches, doctors, and mentors, who taught me many things about health and wellness, meditation, business, longevity, technology, personal development and spirituality, and learned much in the ways to boost my knowledge and confidence. What I learned enhanced and improved my overall sense of emotional balance and well-being.

As well, I’ve bought other books from authors such as Eckart Tolle, Neale Donald Walsch, Louise Hay, and Wayne Dyer about the value of being in the present moment and releasing judgement and “ego.” But, when I listened to Chris’ video about the books that changed his life, some new building block tapped into place with me.

Sharing

I learned from great ones, and the wisdom I impart is because I stand on their shoulders. I’ve given credit (on my blog home page and in my book) to most, if not all, of those who I have learned from, but I have not always supported them financially (because I think I’m so smart–which is another lie of the ego).

http://www.chriscade.com

Therefore, I am eager and thrilled to report that I am now a monthly Patreon supporter of Chris Cade’s work. And it makes me feel so good, like I’ve come full circle in my own journey. (Plus, I’ll finally get to study a Course in Miracles, in the way he’s organized it).

I live my life differently based upon a lot of little things I’ve learned and incorporated, but there are few books I’ve read multiple times and studied, that literally changed my worldview (or actually, my spiritual view and set point).

Feeling

Here’s a link to one of the main books that I’ve grown from, Christ in You, that changed my life. (And one of the few books I bought multiple copies of and given to family and close friends).

And as for Connections, I feel we’re all building blocks that the next generations will use as guideposts along their life journeys. That knowing makes me FEEL existentially wonderful–not only happy. 🙂

Thank you so much for following along and learning WITH me. OM

❤️🦋🌀

Immune health is interconnected

The gut health and chronic dis-ease connection

More is coming to light about the way our guts are related to the health of our immune systems. It’s becoming increasingly important for us to learn how to assist our body’s innate immunity, to benefit from good health.

Our gut (our intestines that make up the microbiome) has quickly become one of the most interesting and engaging topics in medicine. Researchers are exploring the powerful interconnection between human health and the vast ecosystem of bacteria, fungi, protozoa, and viruses living quietly inside. When this ecosystem is out of balance, it can set one up to experience chronic diseases. Such dis-ease might include: auto-immune issues, diabetes, heart disease, mood disorders, and obesity.

Immune health is interconnected with our gut
Immune health is interconnected with our gut

Scientific research now shows that people who have a more diverse gut microbiome have stronger immune systems. When we lack microbial diversity, our immune system suffers. As our immune systems weaken, chronic dis-eases like: autism, insulin resistance, colorectal cancer, Crohn’s disease, ulcerative colitis, celiac disease, multiple sclerosis, polycystic ovary syndrome (PCOS), and more can set in.

Full article here.

We need to focus on how we can support and maintain our immune system, aid and encourage healthy blood pressure, help protect cholesterol levels, and get deep and restful sleep, etc.

Encourage learning

ALL wellness practitioners and companies need to assist us in our health journeys. And we all need to encourage each other appropriately and positively to implement healthy habits.

Innate immunity

Innate immunity refers to nonspecific defense mechanisms that come into play immediately or within hours of an antigen’s appearance in the body. These mechanisms include physical barriers such as skin, chemicals in the blood, and immune system cells that attack foreign cells in the body. The innate immune response is activated by chemical properties of the antigen. Courtesy of:

Cancer

In a research study of about 78,000 men and women without any previous history of cancer or diabetes, a significant number of those who consumed high amounts of sugar over a 7 year timeframe developed pancreatic cancer. The study research stated, “The consumption of added sugar, soft drinks and sweetened fruit soups or stewed fruit was positively associated with the risk of pancreatic cancer.”

Studies show cancer cells rely on sugar to function. Thus, your cancer risk goes up when you consume sugar. The mitochondria of cancer cells thrive on sugar and don’t burn other fuel as effectively.

Diabetes

Foods such as: cinnamon, gymnema sylvestre, and turmeric are especially helpful as anti-diabetic agents. Thus, it may be prudent to add these foods to your diet often.

Obesity

Our brain, gut, and hormones think we need to store more fat than we need. Obese people have an elevated “set-point weight”, otherwise known as hormonal dysregulation. This means that our body thinks we need more food, yet we have too much.

An overweight person can get a fecal implant from a thin person and become thin, by resetting their weight set-point.

Hormonally helpful foods can ease the body to reduce its set-point weight. A microbiome test can provide results to include a list of these foods.

Intermittent fasting

Intermittent fasting

Also called IF, intermittent fasting can be done a number of different ways. For me, the easiest and most effective way has been to skip dinner every other day, yes, even on weekends.

When I skip dinner every other day, it puts me into a mindset whereby it is routine. Even if a family visit or other event pops up on one of my fasting days, I can eat a light vegetable salad or soup, if saying, “Thanks, I’ve already eaten” doesn’t work. The next day I eat normally. And then the next day, I fast. I don’t sabotage myself by thinking because I had veggies on my fasting day I should quit. No! I simply remind myself that I am fasting every other day and keep on with it. I exercise my faith in fasting, and my faith in myself.

Exercising Faith

Exercising Faith

Fasting is an exercise of Faith

Personally, fasting is a means to exercise my faith that all things are working out for me. That the Universe and Omniscience has my back. That another meal will follow on another day. That I don’t need to struggle or worry.

In this way, faith really IS a substance. My inner fortitude and power to easily give up a meal.

Detox

While I fast, I drink more water, sometimes with lemon and ginger juice in it (about 1 ounce of lemon and ginger juice that I freshly juice to 8 ounces of distilled water).

Weight loss

For women over the age of 50, losing weight takes even more focus and knowledge. Ways to enhance your awareness of what and how much you eat can include keeping a food diary. And it’s not just about counting calories, though that’s not a bad idea.

I’ve been tracking my food intake and calories for over 500 days on Lose It! app. 😉 But, I write everything down again on paper for my doctor.

Unfortunately my body did NOT respond to the Nothing til 4pm version of intermittent fasting. For it to work for me, I must skip dinner every other night!

I feel that detoxifying and supplementing, plus writing down my food, activity, bathroom habits, how well / how much I slept each night and such have given me a newfound awareness and level of accountability. Dr. Michele muscle tests me for metals (that I had to detox from), as well as what nutrients I was missing, so I know what and how much supplements to take. So far, working with her has helped me lose more weight than merely counting my calories. ❤️

Hormones

Intermittent fasting research studies show it increased cellular repair, helps heal our guts, and decreases inflammation.

Fasting affects our hormones, such as:

Dopamine–improves cognitive ability.

Ghrelin–the hunger hormone can be better controlled.

Leptin–our resistance to this can be less, so we can release excess weight.

Deep Breathing

Deep Breathing

One of the easiest and most profound ways you can improve your health and ease tension, is to practice several deep breathing techniques–daily.

Deep breathing

Deep breathing

Breathing techniques

First, Lama Nicholas Packard taught me this breathing method which goes like this:

Place your hands on your abdomen and as you inhale, see your hands and abdomen rise (or move outward). Direct your breath to the sides of your body so your ribs expand out. Your upper chest will rise last in this process.

Then, when you exhale bring your belly in first, then your ribs, and finally your upper chest.

Daily breathing like this (start with 5 minutes and increase the amount of time a little bit each day), benefits and heals the lungs.

This practice will increase the air capacity of the lungs.

Second, In the two hour Pranayama breathing workshop Dr. Ronald K. Porter joyously used story, music, dialogue, and meditation with each of us to explore the connect our breath (pranayama) and life vitality. After we did each breathing technique he asked each of us, how we felt in our body.

Drawing from Yogic, Buddhist, and Taoist traditions, Dr. Porter taught us 7 forms of pranayama and explore the numerous sensations produced in the body when we simply “be here now,” allowing ourselves to be in touch with our breathing.

During the class, my right knee was healed!! I loved the class so much that I started going to Dr. Porter’s yoga classes and invited friends to go too!

As well, Jeff Primack teaches Pranayama breathing, which is one of the best deep breathing practices one can master.

Here are two fantastic short videos about Pranic healing:

http://www.pranicvitality.com/pranic-healing

https://www.pranicvitality.com/pranic-healing

The list

  • Belly expanding/contracting (as explained previously)
  • Pranayama breathing
  • Kriya breathing
  • Diaphragmatic breathing
  • Counting breaths (inhale for a certain number, hold, exhale for a certain number–usually for longer than you inhaled)
  • Alternate nostril breathing

Why is breathing important?

Every breath grabs oxygen from the air and brings it into your lungs. Oxygen is absorbed by the hemoglobin in blood and pumped (primarily by your heart) throughout the trillions of cells in your body. If you hold your breath for a minute you’ll begin to turn blue. This should convince anyone that oxygen is vital to the cells in your body.

Alternate nostril breathing can (at least temporarily) relieve high blood pressure.

Mind-body exercises, at their core, help us to focus on our breath, help us relax (the mind and body), ease stress by releasing pent up tension, increase feelings of worthiness and belonging (by connecting different parts of the body with our breath), improve our physical flexibility and stamina, and bring balance back to the body.

Don’t discount natural remedies because you haven’t heard about them from your doctor, as often the experts disagree on what can help us.

Continue to explore other techniques and be sure to comment!

Many blessings to you in ALL ways.

Sacred Science Herbal Detox

Herbal detox presented by Sacred Science

I tuned into to an herbal detox presentation by Nick Polizzi and renowned herbal doctor KP Khalsa, on January 8, 2019. I love and support the mission of the Sacred Science team and have been following Nick’s journey as a filmmaker for several years–most recently I watched and purchased the 9-Part DocuSeries, “Remedy: Ancient Medicine for Modern Illness” put out by Sacred Science.

Audience

I was not alone either. As over 26,000 people connected to watch the live herbal detox webinar.

Explore the many ways to detox
Explore the many ways to detox

Notes

From China, we can obtain the number one herb to help the body’s largest organ: the skin.

Chinese violet leaf

This is a cooling herb that can assist the skin to clear itself of many issues, including swelling and inflammation.

Dr. KP Khalsa recommends beginning with 30 grams a day as a tea.

In fact, with most of these, start out with a small amount of the herb and increase the amount until obtaining the desired effect.

By way of diet changes to improve the skin: green vegetables. (Give it about a month to work)

Black pepper

India’s #1 remedy to purify the blood.

Start with a half capsule per meal. If it upsets the stomach or you have any kind of issue that ends with “itis”, back the amount way down. A little goes a long way.

Dandelion root

This herb, which grows as a weed in most of North America, is beneficial for the liver.

Take 6 or 7 grams in tea or capsules.

It may cause loose stools or nausea. If that occurs back down the amount used. This can be taken for weeks or months.

The liver processes fat soluble vitamins and nutrients and moves them to the large intestines.

By way of diet changes to improve the liver: root vegetables such as: carrots, beets, and radishes.

Gokshuradi

This mild herb benefits the kidneys.

Water soluble. Excretes excess waste / toxins via the urine.

6 to 10 grams is recommended in capsule form.

This rids the body of edema.

As we know, the large intestines are where accumulated waste is stored in the body.

One should have a bowel movement everyday. And what is leftover from processing your food intake should pass through in 18 to 24 hours after eating. One can eat beets or some other colorful food and check the stool to see if the color changes within 24 hours to see proper functioning of the intestines.

Rhubarb root

Take this to ease waste out with little to no discomfort.

Great for children and older folks.

1 gram in capsule form. Increase by 1 gram a day til the desired results are achieved.

Lab tests

AST and ALT test for liver inflammation. And a comprehensive stool analysis (which might cost upwards of $500). Plus, there are other breath or saliva tests that one can also buy and take at home. As well, there are third party labs where you can have a standard liver blood panel done without a doctor’s order.

Diet

Anytime one is detoxing it is wise to eat lighter, less fat and less protein to give the digestive system a rest.

How often should one detox?

One shouldn’t need to detox everyday, but the more times you detox the deeper into the tissues it goes. And if it’s uncomfortable, you’re doing it wrong. Take it easy on yourself. Easy does it.
